My heart sank a little when I found out Tetsuya’s lost a chef hat in this year’s Good Food Guide.

Having dined there just months before, I felt our meal was fully deserving of its three hats. Terry Durack would argue that “you don’t get the same sense of wonderment and surprise that used to be part and parcel of dining at Tetsuya’s.”

But isn’t it nice to know what exactly to expect at Tetsuya’s? I do love a little hocus pocus magic in my food, but at the end of the day I’d like to know that I can return to great food done extremely well.
