Well I made my first attempt at this last weekend. They worked quite well (I was prepared for disaster) but I didn't get that 'crisp' top that I was after. It all was a bit soft - no great difference between the texture of the outer 'shell' and the inside. Any ideas on what I should do differently? They looked and tasted great though :)

Those look absolutely beautiful...you failed to include the amount of lavender that one should add to the dry mixture of almond meal and icing sugar...I am so eager to try these, I can't wait!

These are very pretty macarons! Wow!

I've heard of the bend and press method, too, and saw the process on youtube by a famous French chef, Christophe Morel. Here is the link in case you haven't seen it: http://www.youtube.com/watch?v=G4OkfhA0uK8

What does it mean when you say "I pushed the two together by pressing on the sides of the bowl" ? Did you literally push on the sides of the bowl or...? I have a plastic mixing bowl and I'm not sure I can push on its sides enough to get the mixture together...please clarify! Thanks!
