After all the talk about cocktails following my review of Preshafruit juice, I dusted off my martini shaker and popped open my liquor cabinet for some experimenting.
Appletinis are incredibly simple to make – even if you fudge the vodka/juice balance, the sweetness in the juice makes it quite easy to drink. The addition of Cointreau brings a splash of brightness, as does the lemon peel. While I used the Granny Smith Preshafruit juice, I think the sweeter varieties – such as Royal Gala and Fuji – would have yielded a better result.
Appletini Recipe
1 shot apple or pear infused vodka
1 shot Cointreau
120mL apple juice
Lemon peel
1. Pop a cocktail glass into the freezer for 20 minutes or simply fill with ice cubes
2. Fill martini shaker with ice cubes. Add vodka, Cointreau and apple juice. Replace lid and shake well.
3. To serve, tip out ice cubes and rub lemon peel around the outside rim of cocktail glass. Pour mixture into cocktail.
And voila, bottoms up!
